A Translation of and a Commentary on 100 Cooking Recipes from English into Arabic: How Culture and Culinary Translation Intertwine

الملخص

أصبحت وصفات الطعام موضوع بحثٍ علمي واهتمام أكاديمي في بدايات القرن العشرين. وقبيل ذلك قلما تناولت دراسات الترجمة مواضيع وصفات الطعام للدراسة والبحث. لذلك كان الهدف الرئيس من هذه الورقة البحثية هو دراسة الوصفة كنوع مميز ومنفصل عن باقي الأنواع الكتابية في مجال الترجمة. وفي هذا السياق تم جمع مائة وصفة من خمسة مصادر مختلفة، لتترجم بعد ذلك من الإنجليزية إلى العربية. بعد ذلك تم استخدام طريقة تحليل النص بشكل موازٍ لدراسة كلا النصين العربي والإنجليزي. يهدف هذا البحث إلى تحديد التحديات والصعوبات التي قد تواجه المترجمين خلال عملية ترجمة الوصفات من الإنجليزية إلى العربية على المستوى المعجمي، والنحوي، والنصي، والثقافي. وقد تم تحليل هذه المستويات بناءً على مستوى الإطار العام (الشكل الخارجي للوصفة) والتفصيلي (نحويا) للوصفة المراد ترجمتها. وأظهرت نتائج البحث عدم وجود اختلافات بين اللغتين الإنجليزية والعربية على مستوى الإطار العام، بالرغم من وجود بعض الاختلافات على المستوى التفصيلي، مثل استخدام أدوات النكرة للتعريف والحذف واستخدام الضمائر. وفي هذا البحث تم تحديد وتصنيف وترجمة ٢٢٣ مصطلحًا ثقافيًّا متعلقًا بوصفات الطعام. وخلال عملية ترجمة تلك المصطلحات الثقافية تم تحديد الطريقة الأكثر استخداما وهي "كوبليت" بنسبة ٤١ قائمة على أساس استخدام طريقتين للترجمة. في حين أن الطريقة الأقل استخداما كانت هي الترجمة الحرة بنسبة ١٠٪.

My name is Anwar Salah El-din Doudin. I am currently on my last semester of Masters of Arts in Translation at the University of Sharjah. The program was an eye opening expirence in the sense that it made me self-learn how to become a better translator in every possible sense. This extended to the topic of my research paper in translating the recipe as a genre and assembling a glossary of culture-specifc items as well as food terminology.
